It’s getting a little chilly out there! Whether you’re a lover of the cold or prefer the warm, summer sun, we all love to keep cosy with a steaming bowl of delicious, hearty food. Tomato Dhal

You will need:

– 1 large carrot
– 1 onion, grated
– 1 garlic glove, finely chopped
– 2 cm knob ginger, grated
– 2 tsp olive oil
– 1 small red chilli, finely chopped
– 1 tsp ground cumin
– 2 tsp garam masala
– 1 tsp turmeric
– 250g dried red lentils
– 400 mL water
– 400 mL coconut milk
– 2 tomatoes, diced
– ½ cup chopped coriander

Method:

Heat the olive oil in a large, non-stick shallow pan and saute the onion, carrot, garlic and ginger for 5 minutes, Add chilli, cumin, garam masala and turmeric and cook for 5 minutes, stirring frequently. Add lentils, water, coconut milk and tomatoes and simmer for 15 minutes or until lentils are soft. Stir in coriander and serve immediately.

Serves 4.

Slow Cooked Beef Stroganoff

You will need:

– 1 kg chuck or round steak, cut into thin strips
– 2 Tbsp plain flour
– 2 Tbsp olive oil
– 2 cloves garlic, chopped
– 2 ½ cups sliced mushrooms
– ½ tsp pepper
– ½ L beef stock
– 3 Tbsp tomato paste
– 300 mL light sour cream

Method:

Toss meat in flour. Heat oil in a large skillet and brown meat in batches. Transfer to slow cooker and add remaining ingredients, except sour cream. Cover and cook on low for 8-10 hours or on high for 5-6 hours. In the last 30 minutes, stir through sour cream,

Serve with sweet potato mash and blanched broccolini.
